The 210EXT has a different plug as well as the MIGs and MTs units that I have seen. All us 210EXT's except the limited release of some new models have the 5 pin plug.

When I press the button Pins 1-3 connect and is a solid connection. (That is how it is suppose to work)

Pins 5-2 never change. They show a constant 1.072K ohms (I assume this is not used)

Pints 5-4 do change. At the highest setting it is at 6.8 ohms, in the middle 575 ohms, 1.075K ohms. (That matches what is listed above)

I wonder why the weld stops after 2-10 seconds, as shown in the video. The gray torch does not do that. It keeps running.

Call tech support in the morning and let him walk you through diagnosis.

I will call on Tues. I tested a the gray torch and the pedal.

The gray torch shows a solid connection between pin 1-3 when the button is pushed. Pins 5-2 and pins 4-5 are 100% open connections.

On the pedal. Pins 1-3 do trigger a connection when you press the pedal. Pins 5-2 are open connections. Pins 5-4 range from 116 ohms to 0.969K ohms.

I wonder how the unit knows to allow 4T? It seems that if pins 4-5 have resistance 4T does not work. it has to be forced with hidden menu D08=1

I think the 210EXT is 1-3 for the switch and 2-5-4 for the 1K pot. 5 is common. Mark can correct me on this if wrong. Just off the top of my head.

You should measure between 2 - 4. It will likely be reversed from 5 - 4. It looks like the pot has the outer legs wired to 5 - 2 and the pedal may be only using one side. Hopefully tech support can verify what is correct. This model was a departure for the standard Everlast pedal, so anything is possible.
Did you wiggle the cable and torch while checking pins 1-3? it would only go open for a fraction of a second, based on your video, so it might be hard to measure without a latching meter.
Long arc, short arc, heliarc and in-the-dark!
